We had no marketing plan back then — we couldn't afford one. What we had was the Pomorie fish market at six in the morning and vendors who knew us by name before we'd even opened our doors.

We still get up early, we still cook for our guests the way we'd cook for our own mother. Our menu is shorter than the place next door — because we refuse to serve a dish we don't believe in.
